Sisters Nathalie and Isabelle have taken over their family estate in the small town of Chichée, just south of Chablis. Slowly they have grown their grandfather's 2 hectares of vineyard into 9.5 hectares, all while transitioning to organic farming, strengthening their vines and creating biodiversity in their plots. Through Chardonnay they are able to express the beauty of the limestone rich terroir and two Premier Cru sites. 

 

The spring of 2021 brought hard frosts, which reduced harvest to a quarter of the typical yield. The resulting wine is very concentrated and fresh. It has an elegant nose with notes of citrus fruits, limestone, white flowers, and sea minerals. The palate is generous and the stony minerality truly shines.
 

Grape: Chardonnay

 

Region: Chichée, Chablis, France

 

Terroir: Grapes are harvested from 15 different plots, all with very stony soils full of limestone. The average age of the vines are 40 years old.  Yields in 2021 were roughly 15hl per ha.

 

Viticulture and Winemaking: 

Machine harvested to quickly bring the grapes to the cellar for pressing. Natural fermentations with ambient yeasts and aged for one year on the lees in stainless steel. Light plate filtration before bottling.
