Sisters Nathalie and Isabelle have taken over their family estate in the small town of Chichée, just south of Chablis. Slowly they have grown their grandfather's 2 hectares of vineyard into 9.5 hectares, all while transitioning to organic farming, strengthening their vines and creating biodiversity in their plots. Through Chardonnay they are able to express the beauty of the limestone rich terroir and two Premier Cru sites. 

 

2020 was a classic vintage in Chablis: hot daytime temperatures and cool, fresh nights. The resulting wine is fresh, delicate and balanced. The best grapes from the domain’s 15 parcels go to “Les Serres” and have a maturation on their lees twice as long as their Chablis. The nose has notes of bright citrus, brine and flaky limestone. The palate is overwhelmingly elegant with gorgeous citrus and limestone driven minerality.

Terroir: 

Selection of their best plots in the town of Chichée, totalling 1.4 ha. The plots have limestone marls from Kimmeridgiens. The vines are 40 years old.

 

Viticulture and Winemaking: 

Machine harvest and moved quickly to the cellar for pressing. Natural fermentations with ambient yeast in stainless steel before aging for two years on their lees. Late plate filtration before bottling.
