A pale and aged rosé following the tendency of the great rosés of the world. A Mediterranean, from the South, well-structured and ageing potential wine. A blend of Garnatxa Negra, Macabeu, Ull de Llebre, Carinyena, Garnatxa Blanca and Garnatxa Gris... Viticulture and Winemaking: After pressing all the varietals at the same time, the grape must was fermented in barrels more than ten years old. The fermentation process was long and lasted 6 months. This process was then followed by 7-8 months of ageing in the same barrels. It then goes to big old foudres, and 30% into a big clay pot, for 10 more months of ageing.

This beautiful rosé is made from one south/south-east facing clay, chalky parcel in Sancerre. 100% Pinot Noir, these vines are 20 years old and the grapes undergo whole grape pressing, with a delicate extraction of the juice. François has been in love with this terroir, the vineyards and land of his family since he was young. He never wondered what his future job would be, and needed only to follow his heart to the vines.
