"The pale sparkling rosé 2022 De Nit is a blend of 49% Xarel.lo, 34% Macabeo, 12% Parellada and 5% Monastrell that refermented in bottle where it matured with the lees for 18 months. It has a subtle nose and feels very much like a white wine (which it mostly is) with just a copper tint and almost no red fruit aromas and very faint flavors. It has 12.09% alcohol with a pH of 3.01 and 5.9 grams of acidity balanced by 4.5 grams of sugar. It's clean and precise, and the sugar almost unnoticeable, giving it just an approachable touch but never sweet. It pours powdery pink with a delicate perfume of rosehip and ripe plum. It glitters across the palate with a red berry profile that's somehow at once gentle and tart, like the feeling you get when you earn a sincere compliment. Its fruit profile is rich without being saccharine. It's clear that the Sorbara variety is well suited for this cuvée, being one of the Lambrusco varieties that boasts very thin skins.

Les Filles d’Amàlia/Les Danses is a project born in Celler del Roure, in honour of the mother and sisters of the family. The front label states Blanc de Mandó, because it is a white wine produced by this unfairly forgotten red variety, 100% Mandó. It is not made from pressed wine, but instead only from fresh must. In the end this white wine from red grapes, is the Les Danses Sparkling Rosat. An incredible wine, aged 24 months in bottle. Méthode ancestrale and indigenous yeasts.
