VINIFICATION
The grapes of the three varieties fermented separately in stainless steel vats, with smooth reassembly.
AGING
Partially the wine aged in French oak barrels.
THE HARVEST
2021 was a remarkably balanced year, with a cold and wet winter, a warm spring and a mild summer, with rain at the right times to benefit the vines. The harvest began in the third week of September and ran until the end of October, always in dry weather, which favored the perfect ripening of the grapes and their timely harvest.

ABOUT THE WINERY
Quinta do Cardo is the most historic wine estate in Beira Interior, located between the protected landscape of the Douro International Reserve and the historic village of Castelo Rodrigo, at an altitude of around 750 meters. Its 180 hectares of area are home to forest, cork oaks and around 80 hectares of vineyards. Since 2014 it has been certified in organic production mode. With a continental-influenced climate, winters are harsh and summers have strong temperature variations between day and night. The low humidity favors organic practices and the altitude provides the grapes with slow maturation and excellent acidity. The soils are clayey of granite and schist origin, with quartz veins.
