Pablo’s vineyards, located in Valencia, are farmed manually and organically - harvested by hand in small crates. Vine age ranges from 15 to 70 years old, and the soils are various clays – ranging from fine alluvial and loamy soils to rockier limestone terroirs. Increasingly, he uses more and more whole clusters in the fermentation, finding the finished wines are more refined and savory – elements that are emphasized by the aging in amphorae.
Les Filles d’Amàlia/Les Danses is a project born in Celler del Roure, in honour of the mother and sisters of the family. The front label states Blanc de Mandó, because it is a white wine produced by this unfairly forgotten red variety, Mandó. It is not made from pressed wine, but instead only from fresh must. In the end this white wine from red grapes, is the Les Danses Sparkling Rosat. An incredible wine, aged 24 months in bottle.

Viticulture and Winemaking: 100% destemmed, indigenous yeast. We put the grapes into the press and obtainpure juice without pressure, ends alcoholic fermentation inside the bottle.
