VINIFICATION: Cold carbonic maceration in whole bunches whole bunches without SO2 with indigenous yeasts for 10 to 20 days, depending on the vintage manual devatting followed by pressing in a vertical on a vertical wooden press.
AGING: On fine lees, without SO2, in foudres & concrete vats for 5-8 months.
SOIL: Stony, ancient alluvial soil for La Chapelle and shallow, weathered granite for Lantignié.
HARVESTING: By hand. The grapes are carefullytransported in 25-kilo crates.
CHARACTERISTICS: Bright, attractive colour. Bright ruby. Fresh, delicately fruity nose. Fruity and cheerful. Full-bodied with measure.
